We have the same type of facility at my training facility in Western Australia. The training chefs cook in the restaurant and the training wait staff look after the diners. The maitre d' is their lecturer.
The maitre'd is the main person who greets the diners as they enter the restaurant. They then show them to their table, or pass them to another wait person to take to their table. They do not always wait on tables - their role is to keep an eye on all functions in the dining area, and direct other staff as reuired.
